How about the basics of installing new programs on a couple of the
most common distros?  I would need some computers there with these
distros installed.  I may not be able to pull it together for this
month, but next wouldn't be a problem.

Perhaps one computer with 3 distros installed, and demonstrate the
software installation procedure on each.

Just an idea.  Other than installation (which is almost a no-brainer
and not that interesting to watch--plus better suited to an install
fest) that is the most important general task that all users will
likely use.
